Easy & Delicious Matcha Muffins

Fluffy, soft, and packed with the goodness of matcha, these muffins are a treat your family and guests will keep asking for! Perfect for breakfast, a snack, or even dessert. With their vibrant color and bold flavor, they’re as beautiful as they are tasty!
Ingredients:
- 2 cups almond flour
- 2 tbsp matcha powder
- ½ tsp baking soda
- Pinch of sea salt
- 2 large eggs
- ¼ cup melted butter
- 1 ½ tbsp honey
- 1 cup olive oil
Instructions:
- Preheat & Prep: Preheat your oven to 400°F and line a muffin pan with paper liners.
- Mix Dry Ingredients: In a large bowl, whisk together almond flour, matcha powder, baking soda, and sea salt.
- Mix Wet Ingredients: In a separate bowl, whisk the eggs, then add them to the dry mixture. Stir in melted butter, olive oil, and honey, mixing until well combined.
- Adjust if Needed: If the batter feels too dry, add a little filtered water until it reaches a smooth consistency.
- Fill & Bake: Spoon the batter into muffin cups, filling each about two-thirds full.
- Bake in Two Steps: Bake at 400°F for 5-7 minutes, then reduce the heat to 350°F and continue baking for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
